History:
In order to make olives less bitter, a woman named Freda Ehmann invented a process for curing them back in the 1890s that created the ripe olive industry as we know it today. Now, California Ripe Olives are grown on hundreds of family farms, with groves ranging from 5–1,000-acre lots!
Varieties:
California Ripe Olives are only one of two varieties: Manzanillo and Sevillano. These two varieties produce different sizes of olives ranging from small to colossal.
