Grilled Salmon with Spiced Peaches

Fresh, juicy peaches and sweet caramelized shallots balance the richness of the salmon in this sensational summer dish.
Ingredients
- 2 salmon fillets (6 ounces each)
- Kosher salt, to taste
- Cracked black pepper, to taste
- 1 peach, cut into 8 wedges
- 1 tablespoon chili powder
- 3 tablespoons olive oil
- 2 shallots, cut into thin rings
- Juice of 1 lime
- Juice of 1 orange
- 2 tablespoons chopped chives
- 1 avocado, sliced
Preparation
Season salmon with salt and pepper, then grill to preferred doneness over medium-high heat.
Dust peach wedges with chili powder. Heat a sauté pan to medium-high heat, add the olive oil and caramelize the peach wedges on each side. Remove peaches from pan and reduce to medium heat. Add the shallots and cook until caramelized. Deglaze the pan with lime and orange juices then bring to a boil. Add chives and season with salt and pepper.
Arrange half of the avocado on each serving plate and top with salmon. Arrange peaches on top of the salmon then pour shallot sauce over the top.
