Brûléed Tulip Tree Foxglove Cheese

Double-cream cheese is already decadent, but consider adding a little brûléed sugar to take things to the next level. Serve with crostini, crackers, pears or apples—really anything firm that will hold up to the cheese's sweet-and-savory meltiness.
Ingredients
- 1 package Tulip Tree Creamery Foxglove cheese
- 2 tablespoons granulated sugar
Preparation
Place cheese in the freezer for 20 minutes to ensure a slightly firm texture. After 20 minutes chilling, remove cheese from freezer, and with a hot, wet knife, shave off the top rind to expose the interior.
Sprinkle the sugar evenly over the top of the cheese. With a kitchen torch, brûlée the sugar until it is golden to medium brown. Hold the flame 2–3 inches over one section of the sugar until it begins to melt and just starts to brown. Then quickly move on to the next area. Be careful not to hold the flame over one part for too long, as it will burn the sugar. Serve immediately.
