Diestel Chorizo Queso Dip

Game day, Cinco de Mayo, holiday parties... when is queso dip not a good idea? Answer: Never! This creamy, cheesy dip is sure to please any day of the year.
Ingredients
- 8 ounces Diestel chorizo
- 4 tablespoons butter
- 1 jalapeño, minced
- ½ yellow onion, minced
- 2 tablespoons flour
- 2 cups whole milk
- 8 ounces shredded cheddar cheese
- ¼ cup cilantro, chopped
- Salt, to taste
Preparation
Heat medium sauce pot over medium heat. Add chorizo and sauté, breaking up any chunks, until all moisture has evaporated. Transfer to a bowl.
Add the butter to the sauce pot along with the jalapeño and onion. Sauté for 2 minutes until wilted. Add the flour and cook for 30 seconds. Slowly add the milk while whisking until evenly incorporated.
Bring to a simmer and cook on low for 5 minutes. Remove from heat and whisk in the cheese. When cheese is completely melted, fold in the chorizo and cilantro and season with salt. Serve immediately with tortilla chips for dipping.
