Onion Marmalade, Radish & Arugula Tea Sandwiches

Up the ante on traditional tea sandwiches by making your own onion marmalade! Cut completed sandwiches into 2 or 3-bite squares, triangles or other crustless shapes to complete the tea time experience.
Ingredients
Onion Marmalade:

Tea Sandwiches:

Preparation
To make the onion marmalade, melt butter in small saucepan on medium-low heat. Add onion and salt and cover with a lid. Let simmer for about 30 minutes until all liquid has been released and onions are tender. Remove lid and cook uncovered until all liquid has been reduced and onions are caramelized and jam consistency. Add the dry sherry and sherry vinegar and reduce again to a jam consistency. Chill.
For the tea sandwiches, spread butter on each piece of bread, then layer half of them with onion marmalade, sliced radish and arugula. Top each with another slice of buttered bread, remove crust and cut into individual pieces.
