Honey Fried Rice

For a fresh take on an old favorite, try adding a dash of honey to classic fried rice for a subtly sweet variation that's sure to be a favorite.
Ingredients
- 3 tablespoons sesame oil
- 2 eggs, whisked
- 4 cups white rice, cooked
- ½ cup yellow onion, brunoise
- ¼ cup celery, bruniose
- ¼ cup carrot, bruniose
- ¼ cup scallions, chopped
- 2 tablespoons honey
- 2 tablespoons soy sauce
Preparation
Heat a large nonstick sauté pan on high heat.
Add the sesame oil and then the whisked eggs. Stir quickly to just set and then move eggs to the edge of the pan and add the rice. Spread the rice flat in the pan and then move the eggs up on the rice to prevent them from overcooking. Let rice cook undisturbed for 3–4 minutes to crisp the bottom.
Add the vegetables and toss with the rice while breaking the egg into small pieces. When the vegetables are hot, add the honey and soy sauce and toss to coat rice. Adjust seasoning as desired with more honey or soy sauce. Serve immediately.
