Refrigerator Jam

Savor the fruits of the season with a little easy DIY fun! Sugar can be adjusted based on sweetness of fruit and personal preference.
Ingredients
Plum:
- 6 cups plums, cut into wedges
- ⅔ cup granulated sugar
Strawberry:
- 6 cups strawberries, stemmed and quartered
- ⅔ cup granulated sugar
Blueberry:
- 4 cups blueberries
- ½ cup granulated sugar
Mixed Berry:
- 3 cups raspberries
- 3 cups blackberries
- ⅔ cup granulated sugar
Preparation
Place desired fruit and sugar in a 3-quart sauce pot. Heat on medium, stirring regularly, until liquid is released from the fruit. Turn heat to low and simmer until fruit has broken down and total volume has reduced to ⅓ of the original volume.
Transfer to a storage container and chill uncovered. When completely chilled, cover and store for up to 2 weeks.
Note: To reduce the quantity of seeds in the Mixed Berry variation, pass half of the jam through a fine mesh strainer and incorporate back in with the rest of the jam before chilling.
