Petrale Sole with Meyer Lemon Caper Dill Gremolata

Complement Petrale sole's mild flavor and flaky texture with a simply stunning citrus, caper and herb gremolata.
Ingredients
- 4 portions Petrale sole (6 ounces each)
- Kosher salt and white pepper, to taste
- 1 tablespoon olive oil
- 3 Meyer lemons, zested
- 2 tablespoons minced Italian parsley
- 2 tablespoons minced dill
- 1 tablespoon non-pareil capers, drained
Preparation
Preheat a sauté pan over medium-high heat. Season fish with salt and pepper. Add olive oil to the hot sauté pan, then sauté fish skin-side up until golden brown, 2–3 minutes. Flip and continue cooking skin-side down to desired degree of doneness. Remove fish from pan and keep warm until serving.
To make the gremolata, combine lemon zest, herbs and capers in a small workbowl. Serve with Petrale sole.
