Rosemary Citrus Grilled Chicken Thighs

Both light and flavorful, this simply delicious chicken preparation may become a regular in your recipe rotation.
Ingredients
- 6 chicken thighs, bone-in, skin-on
- 2 tablespoons fresh rosemary, chopped
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 tablespoon olive oil
- Kosher salt, to taste
- Cracked black pepper, to taste
Preparation
Preheat one side of the grill to medium-high heat, leaving the opposite side cooler for indirect heat.
Mix rosemary, garlic, lemon zest, lemon juice, olive oil, salt and pepper in a workbowl until well combined. Add chicken thighs to the mixture and gently toss untill the thighs are evenly coated then set aside to marinate for 20 minutes.
Place marinated chicken on the cooler side of the grill, skin-side up for 12–14 minutes, turning clockweise 90 degrees halfway through. Once the internal temperature reaches 155°F, flip the chicken over, skin-side down halfway between the hot and cool sides of the grill and grill for additionbal 4-6 minutes turning clockwise 90 degrees halfway through unti he internal temperature reaches 165°F. Allow to rest for 5 minutes before serving.
