Yukon Gold Smashed Potatoes

Some like their mashed potatoes smooth and creamy, while others like them chunky. Try this recipe if you prefer a little more texture in your mashed potatoes.
Ingredients
- 5 pounds large Yukon Gold potatoes
- 4 ounces unsalted butter, melted
- 8 ounces heavy cream, hot
- 3 green onions, sliced on the bias
- 2 teaspoons kosher salt
- ¼ teaspoon cracked black pepper
Preparation
In a large pot of salted water, boil potatoes until tender, about 45 minutes. Drain and allow to steam for 5 minutes.
Smash the potatoes with the back of a spoon, then add the butter and cream and mix thoroughly. Fold in green onions, then season with salt and pepper.
