Homemade Gravy

Gravy is the unsung hero of the dinner table—it always ends up dousing everything on your plate, which (no matter what it is) ends up tasting better. In our version, Worcestershire sauce adds some unctuous umami!
Ingredients
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 3 cups chicken broth (with pan drippings, if possible)
- 2 teaspoons Worcestershire sauce
- Kosher salt, to taste
- Cracked black pepper, to taste
Preparation
To make a roux, start by melting butter over medium-low heat in a medium sauce pan. Slowly stir in the flour and cook 10–15 minutes, stirring frequently until golden brown and nutty.
Slowly add broth, whisking to avoid lumps. Cook over low heat, whisking frequently, for about 20 minutes to ensure complete thickening.
Strain and season to taste with Worcestershire sauce, salt and pepper.
