Save time making these sweet Italian pastries by starting with premade cannoli shells and focusing fully on the decadent ricotta filling.
Ingredients
- 32 ounces whole milk ricotta cheese
- 1½ cups powdered sugar, plus more for garnish
- 2½ teaspoons vanilla paste
- ½ teaspoon kosher salt
- 6 ounces pistachio cream
- ½ cup mini chocolate chips, plus more for garnish
- 1 package (4 ounces) cannoli shells, or 2 packages (4 ounces each) mini cannoli shells
- Chopped pistachios, for garnish (optional)
Preparation
Drain the ricotta by lining a fine mesh strainer with cheesecloth, then placing over a bowl and adding the ricotta to the strainer. Let the ricotta drain in the refrigerator for at least 2 hours.
In a mixing bowl, stir together drained ricotta, sugar, vanilla, salt and pistachio cream. Add the chocolate chips and stir to combine.
Transfer mixture to a piping bag fitted with a large round tip, then pipe filling into cannoli shells. Dip each end into chocolate chips or pistachios, then gently dust with powdered sugar before serving.
