Ingredients
- 2 tablespoons cooking oil
- Kosher salt, to taste
- Cracked black pepper, to taste
- 2 pounds small red potatoes, rinsed
Preparation
Preheat oven to 400°F.
Mix oil, salt and pepper well. Place potatoes into a large work bowl and toss with oil mixture until well coated.
Roast potatoes for 20–25 minutes, or until tender.
