Ingredients
- 1 cup heavy cream
- 1 teaspoon instant espresso
- Pinch of cinnamon
- 4 egg yolks
- ⅓ cup granulated sugar
Preparation
In a small saucepan, heat cream, espresso, and cinnamon until bubbles form just around the edges—do not let it boil.
Whip egg yolks and sugar together in a small bowl. While whisking continuously, pour ¼ cup of the cream mixture into the bowl in a slow, steady stream to temper the yolks. Then whisk the tempered yolk mixture into the saucepan.
Return saucepan to the stove over very low heat. Cook for 8–10 minutes, until sauce is thickened and evenly coats the back of a spoon.
Strain finished sauce, then chill in the refrigerator until ready to use.
