Sparkling Wine Sorbet

Not just for dessert, sweet and tart sorbets like this act as excellent palate cleansers between courses, readying the mouth for the next adventure.
Ingredients
- 2 cups water
- 2 cups granulated sugar
- 3 cups sparkling wine, chilled
- 1½ cups sparkling water, chilled
- Juice of 2 lemons
Preparation
Combine water and sugar in a small saucepan and bring to a rolling boil for 2 minutes to make simple syrup. Remove from heat and cool completely.
Once cool, combine simple syrup with chilled sparkling wine, sparkling water, and lemon juice. Pour mixture into an ice cream maker and freeze according to the manufacturer's directions.
When frozen, transfer sorbet to a sealable plastic container and keep in freezer until ready to serve.
