Simple Grilled Vegetables

What grilling session is complete without some fresh vegetables? Use this recipe as is or experiment with your own favorite veggies, and if you like fresh herbs, try adding oregano, rosemary, or thyme after grilling.
Ingredients
- 1 bunch asparagus, ends trimmed
- 4 portabella mushrooms, de-gilled
- 1 package (1 pound) mixed sweet peppers
- ½ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- 2 teaspoons kosher salt
Preparation
Preheat the grill to medium-high heat.
Toss vegetables in a bowl with oil, balsamic vinegar, and salt until coated.
Grill vegetables over direct heat, turning often for 8–10 minutes, or until the asparagus is tender.
Remove vegetables from heat. Slice the mushrooms and arrange with other vegetables on a platter to serve.
