Sesame Soy Salmon Burger

Step outside the burger box with this hearty, flavorful salmon burger made even better with a bit of curry mayo and fresh cabbage slaw.
Ingredients
- 1¼ pounds salmon, small-diced
- 1 tablespoon soy sauce
- 1 teaspoon rice wine vinegar
- 2 tablespoons minced shallots
- 1 tablespoon toasted sesame seeds
- ¼ cup panko breadcrumbs
- 1 carrot, julienned
- 4 large radishes, julienned
- ½ head Napa cabbage, julienned
- ¼ cup canola oil
- ¼ cup mayonnaise
- 2 teaspoons green curry paste
- 4 hamburger buns
Preparation
Mix the salmon, soy sauce, vinegar, shallots, sesame seeds, and panko in a bowl and refrigerate for at least 30 minutes.
Toss julienned carrot, radishes, and cabbage together.
Preheat a large nonstick skillet over medium-low heat and coat with a thin layer of oil. Lightly form the salmon mixture into 4 even patties and pan-fry for 3–5 minutes per side. Do not jostle the patties at first, as they can easily fall apart.
While the patties fry, combine the mayo and curry paste.
When the burgers are done, spread each bun with curry mayo and place a heaping pile of the cabbage slaw on the bottom bun. Place the salmon burger on top so that the juices will mix with the slaw, then top with the top bun and serve.
