Kathy's Broccoli Casserole

This side dish is so easy and quick! It's cheesy, gooey, and comforting.
Ingredients
- 1 large broccoli crown, steamed and chopped into medium florets
- 2 eggs
- 2 tablespoons small-diced yellow onion
- 8 ounces shredded cheddar cheese
- 2 cans (10.5 ounces each) condensed cream of broccoli, celery, or mushroom soup
- ¼ cup water
- 1 stack Ritz crackers
- ½ cup unsalted butter
Preparation
Preheat the oven to 350°F.
Combine broccoli florets, eggs, onion, cheddar cheese, soup, and water and pour into a large casserole dish.
Place crackers in a plastic bag and crush to make fine crumbs. Sauté cracker crumbs in butter until lightly browned, then sprinkle over mixture.
Bake casserole for 30 minutes, or until bubbly and browned on top. Let rest for 15–20 minutes before serving.
