The only thing that might be more delicious than butter cake is wine-soaked strawberries, and this recipe includes both. A perfect springtime treat.
Ingredients
Strawberries:
- 1 cup red wine
- ¼ cup sugar
- 1 lb. strawberries
Whipped Cream:
- 1 cup heavy whipping cream
- ⅛ cup powdered sugar
- ½ tsp vanilla extract
Cake:
- 1¾ cup flour
- 1 tsp salt
- 2 sticks of unsalted butter (1 cup)
- 1¼ cup sugar
- 1 tsp vanilla extract
- 4 eggs
- ¼ cup milk or cream
- 1 tsp baking soda
Preparation
Strawberries Directions: Rinse strawberries. Cut off caps and cut each berry in half. Set aside. Simmer wine and sugar over medium flame for 5–6 minutes, stirring intermittently. Sauce should thicken slightly. Add berries to sauce and cook for an additional 2–3 minutes. Berries should soften slightly but still remain in tact. Cool and place in refrigerator to chill.
Whipped Cream Directions: In a mixing bowl, combine ingredients and whip with a hand mixer for 3–5 minutes until fully whipped.
Cake Directions: In a bowl, combine flour, salt, and baking soda and set aside. In a mixing bowl, cream the sugar and butter. Add vanilla and milk or cream. Add eggs in one at a time and continue mixing. Slowly add the flour, salt and baking soda while continuing to mix. Spray a loaf cake pan with nonstick cooking spray and pour batter into it. Bake in an oven preheated to 325°F for 60–65 minutes. Cake should be golden brown around the edges. Cool the cake to room temperature. Cut cake into cubes and serve with strawberries and whipped cream.
