Double Rainbow Soup with Chicken

This fresh soup provides a rainbow of key nutrients vital for healthy skin, immune function, circulation and vision in fewer than 180 calories per serving.
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 pound chicken breasts, medium-diced
- 1 red onion, sliced
- 3 garlic cloves, minced
- 1 bunch rainbow carrots, chopped
- 1 bunch rainbow chard, chopped
- 1 bunch dino kale, chopped
- 1 zucchini, chopped
- 1 bunch cilantro, chopped
- 1 quart chicken broth
- 1 green onion, sliced for garnish
- Kosher salt and pepper, to taste
Preparation
In a large soup pot, heat olive oil over high heat. When oil begins to smoke, add chicken and sear 5–6 minutes on each side to brown. Add onion, garlic, carrots and chard and cook for an additional 3–4 minutes. Add remaining ingredients and simmer for 20 minutes or until vegetables are tender. Season to taste with salt and papper and garnish with sliced green onion.
