Memphis-style barbecue is one of four dominant regional styles of barbecue in the U.S. Like many Southern interpretations, these ribs are prepared with a dry rub before cooking, and are normally eaten without sauce.
Ingredients
- 2 slabs (approximately 4 pounds) pork baby back ribs
- 3 tablespoons molasses
- 2 tablespoons tomato paste
- 2 tablespoons sea salt
- 2 tablespoons granulated sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon chili powder
- 1 tablespoon soy sauce
- 1 teaspoon cayenne pepper
Preparation
Preheat oven to 350°F.
Lay out ribs on work surface.
Mix remaining ingredients thoroughly in a work bowl. Rub mixture generously onto ribs, coating both sides evenly. Double-wrap ribs with aluminum foil, creating as close to an airtight seal as possible to create steam in the cooking process.
Place foil-wrapped ribs onto baking sheet and bake for 1½ hours. Remove ribs from oven and unwrap, leaving the ribs in the foil; the meat should have pulled away from the bones exposing the tips.
Raise oven temperature to 400°F.
Return ribs to the oven for approximately 30 minutes, or until the ribs have a slightly charred and crispy appearance. Remove from oven and let ribs rest for 5-7 minutes before serving.
