Roasted Spaghetti Squash

Simple, healthy, versatle, and delicious, roasted spaghetti squash makes an outstanding start to almost any meal.
Ingredients
- 1 spaghetti squash, halved lengthwise and deseeded
- 1 tablespoon extra virgin olive oil, plus more for garnish
- 1 teaspoon kosher salt
- 1 teaspoon cracked black pepper
- 2 teaspoons chopped Italian parsley, for garnish
Preparation
Preheat oven to 350ºF.
Oil the cut sides of the squash, then season with salt and pepper. Bake cut-side down on a parchment paper-lined baking sheet for 30 minutes, or until tender.
While still warm, use a fork to pull the squash apart into spaghetti-like strands. Drizzle with extra virgin olive oil and garnish with parsley.
