Roast Chicken with Tubers & Mushrooms

A classic roast chicken from which a plethora of meals can be created. Talk about cheap eats!
Ingredients
- 1 organic roasting chicken
- 1 bunch baby carrots
- 6 baby new potatoes
- 1 pint mixed mushrooms
- 1 bunch spring onions
- 1 tbsp olive oil
- salt and pepper to taste
Preparation
Preheat oven to 350F
In a large workbowl, toss washed vegetables in oil and season with salt and pepper. Arrange vegetables in a roasting pan. Place chicken on top of vegetables and roast for 75 minutes or until a probe thermomoeter inserted into the thickest part of the thigh reads160 F. Remove from oven, cover loosely with aluminum foil and let rest for 10 minutes before serving.
