Ingredients
- 2 pounds carne asada
- 2 ounces canola oil
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 orange bell pepper, julienned
- 1 red onion, julienned
- 1 jalapeño, sliced thin
- 1 lime
- 5 sprigs cilantro, chopped
Preparation
Heat an oiled cast iron fajita skillet over medium-high heat. Place carne asada in hot skillet and cook for 3 minutes per side, then set aside. Increase the heat to high and place veggies in the same fajita skillet. Cook 3–5 minutes, stirring occasionally, until nicely seared.
Slice rested carne asada and place on seared vegetables. Finish with a squeeze of lime and cilantro. Serve immediately on hot skillet or chosen serving dish.
