High Sierra Sirloin
Bring out the best in your Sierra sirloin by coating it with a savory, peppery marinade before it goes into the oven.
Ingredients
- 1 Sierra sirloin roast (2 pounds)
- 2 tablespoons sea salt
- 2 tablespoons brown sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon chili powder
- 1 tablespoon soy sauce
- 1 tablespoon beer
- 1 teaspoon yeast
- ½ teaspoon cayenne pepper
- ½ teaspoon cracked black pepper
- ½ teaspoon mustard powder
Preparation
Make the marinade by mixing together all ingredients except the roast in a work bowl. Coat the roast generously in marinade until completely covered. Marinate at room temperature for 1–2 hours.
Preheat oven to 400°F.
Place roast in a roasting pan on a rack. Cook in oven for approximately 35–45 minutes, or until a thermometer inserted into the center of the roast reads 135°F for medium-rare, or to desired doneness.
Remove roast from oven, tent with foil, and let rest for 30 minutes before slicing and serving.
