Ingredients
- 1 cup organic buckwheat flour
- ¼ teaspoon sea salt
- 1 teaspoon baking powder
- 2 tablespoons molasses
- 1 egg, well beaten
- 1 cup milk
- 1 tablespoon vegetable oil
- 4 ounces smoked gravlax salmon
- 3 tablespoons crème fraîche
- 1 sprig dill
Preparation
Combine buckwheat flour, sea salt, baking powder, molasses, egg, milk and vegetable oil in a bowl, just until wet. Spoon small circles of batter onto medium-hot griddle. Cook until bubbles form around the edges of the pancake. Flip and cook other side.
Top each mini pancake with ½ ounce smoked salmon, ½ teaspoon crème fraîche and a small sprig tip of dill.
