Shortbread Cookies

For a simply delicious treat, enjoy these traditional, buttery cookies fresh from the oven.
Ingredients
- 2¼ cups unsalted butter, at room temperature
- 1 tablespoon vanilla
- 6 ounces powdered sugar
- 12 ounces bread flour
- 6 ounces rice flour
- ½ teaspoon kosher salt
Preparation
Place butter, vanilla, and powdered sugar in a mixing bowl. Mix on low with a paddle attachment until creamy. Add the bread flour, rice flour, and salt and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate 1 hour.
Preheat oven to 350°F.
Roll dough out into a 16x12-inch rectangle on a piece of parchment paper, then transfer the parchment paper to a sheet pan. Mark the top of the dough with wavy lines using a fork. (If the fork sticks to the dough, you can dip it in vegetable oil.)
Bake shortbread for about 20 minutes, or until the top is golden brown. Remove from oven, then cut shortbread on the bias into 4 strips lengthwise and 5 across while the pan is still warm. Allow shortbread to cool completely before moving.
