These tasty potato pancakes of love are great to serve any time of the year, especially when served with smoked salmon, sour cream, and applesauce.
Ingredients
- 4 large potatoes
- 1 small onion
- 2 large eggs, lightly beaten
- 1 tablespoon kosher salt, or to taste
- 3 tablespoons all-purpose flour
- 1 quart vegetable or olive oil, for frying
- Smoked salmon, for serving
- Applesauce, for serving
- Sour cream, for serving
Preparation
Coarsely grate potatoes and onion using the largest setting on a box grater. Transfer the shredded mix to a fine mesh sieve and use a large spoon or your hands to press out as much of the moisture as possible.
In a large mixing bowl, combine beaten egg with salt. Add potato and onion shreds, mix well, add flour, and mix again.
Heat oil in a 12-inch skillet over high heat until shimmering. Working in batches, spoon about 4 ounces of the mixture into the skillet per latke, flattening the tops slightly. Reduce heat to medium-high and cook until the bottoms are browned, about 5 minutes. Flip latkes and cook an additional 5 minutes.
Once cooked, transfer latkes to a paper towel-lined plate. Repeat with all remaining mixture. Serve latkes while hot with applesauce, sour cream, or smoked salmon.
