Mediterranean Chicken Thighs

Classic Mediterranean flavors like garlic, capers, tomato and lemon shine in this bright entrée.
Ingredients
- 4 chicken thighs, boneless and skinless
- 2 teaspoons kosher salt
- 2 teaspoons cracked black pepper
- 1 tablespoon extra virgin olive oil
- 2 garlic cloves, sliced
- 1 tablespoon capers
- 1 lemon, zested and juiced
- 12 ounces tomatoes, chopped
- 4 sprigs basil, chiffonade
Preparation
Season chicken with salt and pepper.
Heat large pan over medium-high heat. Add oil to hot pan and when it smokes, add chicken. Sauté chicken over high heat for 3-4 minutes or until browned, then flip and sauté another 3-4 minutes.
Add garlic, then capers, lemon juice and tomatoes and sauté for an additional 4-5 minutes, or until a thermometer inserted into the thickest part of the chicken reads 165°F.
Finish with basil and lemon zest, add salt and pepper to taste, toss and serve.
