Chocolate Cheesecake Muffins

Ingredients
Filling:
- 8 ounces cream cheese
- 1 egg
- 1 cup chocolate chips
- ⅛ teaspoon salt
- ⅓ cup sugar
- 1 tablespoon lemon juice
Muffins:
- 1½ cups flour
- 1 cup sugar
- ¼ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup water
- ½ cup cooking oil
- 1 tablespoon white vinegar
- 1 teaspoon vanilla
Preparation
Preheat oven to 325° F.
Combine all ingredients for the filling and set aside.
Sift the dry ingredients for the muffins. Mix water, oil, vinegar and vanilla together, then combine dry and wet ingredients and stir until well-blended.
Line muffin pan with paper liners. Fill each cup ⅓ full with muffin batter, add 1 tablespoon cream cheese mixure, then fill with batter to ⅔ full.
Bake for 24-26 minutes. Serve with a cold glass of milk.
